I am seeing something similar on an iPhone 3GS. I have a directv activity set up and audio is controlled via IR on my pioneer vsx82tsx receiver. I am experiencing very long latencies between pressing the physical button (up or down) and the resulting volume change.

On the other hand, if I use the virtual directv remote in Roomie, volume changes and mute occur immediately. For now I've disabled the override volume feature.

There are some issues with Hardware Volume when used with Infrared devices. For now, we'd recommend using it only with IP control devices. This is resolved in 1.6.1.
